
INGREDIENTS
- 2 cloves garlic, minced
- 1 red onion, diced
- 1 lb sweet potatoes, cubed
- 1 can black beans (rinsed + drained)
- 1 tbsp cooking oil
- 1 tbsp paprika
- 1 tsp cumin
- Pinch of cayenne
- 2 pinches salt
- 8 small corn tortillas
- 1 lime (cut into wedges)
- 1 avocado (sliced)
Optional: fresh salsa, cilantro, hot sauce, plain Greek yogurt
INSTRUCTIONS
- Heat oil in a skillet.
- Add garlic, onion, salt and sauté for 3 minutes.
- Add sweet potatoes and spices with 2 tbsp water.
- Cover and let simmer until tender.
- Toss in black beans and heat through.
- Adjust seasoning, if needed.
- Warm tortillas.
- Fill tortillas and top with a squeeze of lime.
