Sweet Potato & Black Bean Tacos

INGREDIENTS

  • cloves garlic, minced
  • red onion, diced
  • 1 lb sweet potatoes, cubed
  • 1 can black beans (rinsed + drained)
  • 1 tbsp cooking oil
  • 1 tbsp paprika
  • 1 tsp cumin
  • Pinch of cayenne
  • 2 pinches salt
  • 8 small corn tortillas
  • lime (cut into wedges)
  • avocado (sliced)

Optional: fresh salsa, cilantro, hot sauce, plain Greek yogurt

INSTRUCTIONS

  1. Heat oil in a skillet.
  2. Add garlic, onion, salt and sauté for 3 minutes.
  3. Add sweet potatoes and spices with 2 tbsp water.
  4. Cover and let simmer until tender.
  5. Toss in black beans and heat through.
  6. Adjust seasoning, if needed.
  7. Warm tortillas.
  8. Fill tortillas and top with a squeeze of lime.

MAKE IT YOURS

Want more heat? → add hot sauce
Want it creamy? → add yogurt
Want it fresh? → load up cilantro + salsa
