🥞 Bean & Potato Pancakes
Ingredients
• 1 can chickpeas, great northern beans, or navy beans
• 2 medium potatoes (or sweet potatoes)
• ½ medium onion or 1 small onion
• Optional: ½ leek instead of onion
• If using leek: add 1 parsnip or carrot for natural sweetness
• 2 eggs (or 2 flax eggs for vegan option)
• ½ tsp cumin
• ½ tsp baking powder
• ½ cup starch (arrowroot, tapioca, corn, or potato starch)
• Sea salt and pepper to taste
Instructions
1️⃣ Grate the potatoes and onion (or leek).
2️⃣ Drain and mash the beans in a bowl.
