Healthier ‘Caramel’ Apples

Since fall is here, it’s easy to succumb to traditional cravings such as baked goods, candy corn and candied or caramel apples. Caramel is delicious, however it is full of processed sugar and heavy dairy. So let’s try making a special little fall treat that is a bit healthier than the traditional caramel apples.

Ingredients

  • 16 medjool dates, pitted
  • 1/4 cup non-dairy milk, (such as soy or almond)
  • ¼ refined coconut oil
  • 1 1/2 tablespoons peanut butter (or other nut butter)
  • 1 1/2 teaspoons vanilla extract
  • Pinch of Sea Salt
  • 8 mini Rocket Apples (or six large apple of your choice)

Optional: Toppings

Chopped nuts
Unsweetened coconut flakes
Crushed Banana Chips

  1. Put dates, milk, nut butter, vanilla extract, salt into a food processor or blender. Blend until smooth.
  2. Prepare a baking sheet lined with parchment paper. Push a stick into the center of each apple as a handle then spread the date ‘caramel’ paste evenly upon the apple’s surface until evenly coated.
  3. Roll the apple in any desired toppings if you wish.
  4. Chill in the fridge and enjoy!
