Rainbow Chickpea Salad

Colorful fresh chickpea salad that would be great for any occasion! This high protein side is quick and easy to put together for a fresh addition to any meal or as a meal by itself.

Ingredients

Salad

  • 2 cans of chickpeas, drained and rinsed twice
  • 1 can of Dark Red Kidney Beans, drained and rinsed twice
  • 2 Roma Tomatoes, diced
  • 1 Orange Bell pepper, diced
  • 1 cup Frozen or Fresh Corn
  • 1 cup of Frozen or Fresh Green Peas
  • ½ of Sweet Vidalia Onion, diced

Dressing

  • 3 tablespoons White Miso Paste
  • 2 tablespoons Tahini
  • 3 tablespoons water
  • 1 tablespoon Lemon Juice
  • ½ teaspoon garlic powder
  • Salt and Pepper to taste

Instructions

  1. Cut and prep salad ingredients and combine in a large mixing bowl.
  2. Mix whisk dressing ingredients together in a separate bowl then spoon into the large mixing bowl with the vegetables. Toss to coat and serve with your favorite lettuce.
