Colorful fresh chickpea salad that would be great for any occasion! This high protein side is quick and easy to put together for a fresh addition to any meal or as a meal by itself.
Ingredients
Salad
- 2 cans of chickpeas, drained and rinsed twice
- 1 can of Dark Red Kidney Beans, drained and rinsed twice
- 2 Roma Tomatoes, diced
- 1 Orange Bell pepper, diced
- 1 cup Frozen or Fresh Corn
- 1 cup of Frozen or Fresh Green Peas
- ½ of Sweet Vidalia Onion, diced
Dressing
- 3 tablespoons White Miso Paste
- 2 tablespoons Tahini
- 3 tablespoons water
- 1 tablespoon Lemon Juice
- ½ teaspoon garlic powder
- Salt and Pepper to taste
Instructions
- Cut and prep salad ingredients and combine in a large mixing bowl.
- Mix whisk dressing ingredients together in a separate bowl then spoon into the large mixing bowl with the vegetables. Toss to coat and serve with your favorite lettuce.
